This is a busy month in a crazy time. From the time of this post, I have 3 days until my due date with our newest addition. No, he hasn’t been born yet. That’s only a part of it, however. My older kids go back to school the Monday after and I’ve been running around, 9 months pregnant, gathering school supplies and dress code attire for their first days back. None of this I necessarily had to accomplish myself, I did have help. But it’s what my kids expect. And it’s what moms do. Plus, I thought walking would maybe help to expedite the situation. Obviously, it hasn’t.

It’s just part of the messiness of motherhood. And it’s only about to get messier. On those days, though, at least we have Red Baron as a mealtime solution to tame the craziness. And I can rely on my inner Red Baroness, the one who’s seen and done it all with patches to show for it.

And because I’m part Red Baroness and still want to make sure my kids have a balanced meal, even when our days are turned upside down thanks to the start of school and a new sibling to get to know, we need a quick and easy fresh side dish.

Our Bacon Onion Avocado Stuffed Cherry Tomatoes are just as the title suggest. Cherry tomatoes with the tops cut off, then scooped out with a melon baller. You can cut just the slightest bit of the bottoms off, too, so they sit flat.

The filling to our Bacon Onion Avocado Stuffed Cherry Tomatoes consists of a quick mixture of mashed avocado. I love avocado and would include it in every dish if I could.

Then, about half the scooped out tomato, finely chopped onion, a dash of lemon juice, and bacon bits. Top with a few sprinkles of fresh cilantro for a side dish that the kids will love almost as much as the pizza.

Bacon Onion Avocado Stuffed Cherry Tomatoes

Yield: 30 tomatoes
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 1 pint cherry or grape tomatoes
  • 1 ripe avocado, pitted and diced
  • 1 tbsp onion, finely diced
  • 2 tbsp bacon bits
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • dash garlic powder
  • fresh cilantro, optional

Instructions

  1. Cut the tops off tomatoes. We did ours lengthwise. Scoop out inside with melon baller.
  2. Pit and dice a ripe avocado. Place chunks in bowl.
  3. Add lemon juice, bacon bits, and finely diced onion. Mash all together with a fork. Or for a finer consistency, put in a blender.
  4. Add salt, pepper, and garlic powder.
  5. Using a small spoon, or the same melon baller, scoop avocado mixture into tomatoes.
  6. Garnish with cilantro, if desired.
