It’s a new year, a new start, and now is as good a time as any to make some changes. Nothing drastic here, I’ve already said and reiterate that I don’t like to make resolutions. But I’m determined to make this year better. We can start to do better by incorporating an extra boost of protein from fresh roasted peanuts in Jif Peanut Powder!
Part of doing better is providing my kids with better snack options. This is especially important for my oldest son, Jedi, who is type 1 diabetic. He needs balanced snacks on hand at all time in case his blood glucose levels drop too low, but I have to admit that I usually just send him off with whatever’s easiest. New year, though! Time to do better! Snacks with protein are especially great as not only is it essential for growing bodies, but the protein helps stabilize his blood sugar.

A great breakfast, side dish, or snack to enjoy at home or Jedi can take to school, these Banana Bread Muffins are like your favorite banana bread, but in muffin form and perfect with a smear of butter! For the muffins, we picked up a package of Jif Peanut Powder at Walmart, located with the peanut butters, along with our other ingredients.
To make your Banana Bread Muffins, you first need bananas. Bananas, that’s a funny word to say and a funny word to type, too. In a large bowl, mash up 3 of them with a fork.
To that, add brown sugar, sugar, greek yogurt, a couple eggs, oil, Jif Peanut Powder, and water. In a separate bowl, mix together flour, cinnamon, baking powder, and salt. Then fold the flour mixture into the banana mixture.
Add to a prepared muffin, filling each about ¾ of the way full. Then bake at 350 for about 20 minutes, or until a toothpick comes out clean.
Have some butter on hand and get ready to go bananas!
I’m telling you, bananas. It’s a fun word to type. And these Banana Bread Muffins are a yummy treat to eat whenever you feel like going a bit bananas.

Banana Bread Muffins
Ingredients
- 2 1/2 cups flour
- 1/2 tsp cinnamon
- 3 1/2 tsp baking powder
- 1 1/2 tsp salt
- 3 large ripe bananas, mashed
- 1/4 cup packed brown sugar
- 1/4 cup sugar
- 1/4 cup Greek yogurt
- 1 tbsp vegetable oil
- 2 eggs, slightly beaten
- 1/2 cup Jif Peanut Powder
- 1/2 cup water
Instructions
- Preheat oven to 350. Spray muffin tin with cooking spray.
- Combine flour, cinnamon, baking powder and salt in a medium bowl. In a separate, large bowl, mash the bananas then add brown sugar, sugar, yogurt, eggs, oil, Jif Peanut Powder, and water until well combined.
- Fold the dry ingredients into the wet ingredients until well mixed.
- Spoon into muffin pan, about 3/4 of the way full in each.
- Bake for about 20 minutes, or until a toothpick comes out clean.

These muffins really look yummy! I know they would be perfect in the morning. I have never heard of the Jif powder. I can think of so many recipes that I could use it in. I will have to look for it the next time I am in Walmart.
