Cinnamon Raisin Mini Muffins

It’s almost a month now since my kids have gone back to school. If there’s one thing I’ve learned in this time it’s that I better have a snack ready for them when they hop off that school bus home at the end of the day. My kids can be scary when they’re hungry.

Of course, I like snacks that are quick and easy. That should be just a common phrase around here, quick and easy. But I also prefer wholesome and healthy. That way I can hide all the chocolate for myself.

Luckily, I’ve found that my kids love California Raisins. These Cinnamon Raisin Mini Muffins are a great bite-sized after-school treat. They would also make a wonderful running-for-the-bus breakfast snack. And so easy to make, because isn’t that my motto around here. Quick and easy.

Cinnamon Raisin Mini Muffins

Simply stir all the dry ingredients together, except for the brown sugar which gets mixed with the butter, milk, and egg. Then combine them both until well blended. Take a small spoon and fill each paper-lined muffin cup about ¾ of the way full. Sprinkle each with a cinnamon sugar mixture before placing in a 375 oven for 10 minutes, or until a toothpick comes out clean.

A great bite-sized snack made using California Raisins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 cup California raisins
  • 1/2 cup brown sugar - packed
  • 1 lrg egg
  • 1/4 cup butter - melted
  • 1/2 cup milk
  • 1/2 tsp cinnamon & 1/2 tsp sugar mixture for topping

Instructions

  1. Line mini muffin tins with paper cups and preheat oven to 375.
  2. Mix flour, baking powder, cinnamon and raisins in a large bowl.
  3. Mix brown sugar, egg, butter and milk in a different bowl until smooth.
  4. Stir the wet and dry ingredients together until just moistened.
  5. Spoon batter into muffin tins, filling each about 3/4 of the way full.
  6. Combine 1/2 tsp of cinnamon and 1/2 tsp of sugar. Sprinkle on top of each muffin.
  7. Bake for about 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  1. My kids love raisins and these look so yummy! I’m thinking these would be good to make-ahead and then freeze so they can grab them in the morning before school and pop them in the microwave.

  2. My kids love raisins also, so these would be perfect. We are only in the first month of school & they are already dragging in the mornings. Something quick and easy is perfect for us.
