Cinnamon Raisin Mini Muffins
It’s almost a month now since my kids have gone back to school. If there’s one thing I’ve learned in this time it’s that I better have a snack ready for them when they hop off that school bus home at the end of the day. My kids can be scary when they’re hungry.
Of course, I like snacks that are quick and easy. That should be just a common phrase around here, quick and easy. But I also prefer wholesome and healthy. That way I can hide all the chocolate for myself.
Luckily, I’ve found that my kids love California Raisins. Simply stir all the dry ingredients together, except for the brown sugar which gets mixed with the butter, milk, and egg. Then combine them both until well blended. Take a small spoon and fill each paper-lined muffin cup about ¾ of the way full. Sprinkle each with a cinnamon sugar mixture before placing in a 375 oven for 10 minutes, or until a toothpick comes out clean. A great bite-sized snack made using California Raisins

My kids love raisins and these look so yummy! I’m thinking these would be good to make-ahead and then freeze so they can grab them in the morning before school and pop them in the microwave.
