Being a mom is sometimes hard. Trying to work from home with a 1 year old toddling around is hard. Attempting to give everyone the attention they need, get everything done, and still have a moment to breathe is hard. By the end of the day, I am beat. So when it comes to making dinner, I am more than happy to take some help from the store. Especially when that help is as tasty as Michael Angelo’s.

While on our latest trip to Walmart, we made sure to pick up a Michael Angelo’s Family Size Lasagna with Meat Sauce, because an easy, tasty lasagna that I just throw in the oven is always a win on a busy weeknight.
Also a win? Pizza. Thinking outside the box, I thought the 20oz. Box Michael Angelo’s® High Protein Meal Starter Chicken Piccata would make the perfect weeknight pizza. And I was right. Super easy and super delicious!
Because when every other part of the day has been hard, at least should be easy. That’s what I love about pizzas. The kids can help, we can actually have fun in the kitchen, and dinner is ready in a matter of minutes.
I have to say, we outdid ourselves with this Easy Chicken Piccata Pizza, though. All of the flavor is already packed by Michael Angelo’s. The only other ingredients you’ll need is a store-bought pizza dough, shredded mozzarella cheese, dried basil, and olive oil. Diced tomatoes would also make for a nice pop of freshness if you happen to have some on hand.
Simply heat the Michael Angelo’s® High Protein Meal Starter Chicken Piccata for 8 minutes. This is slightly less than the box says, but it’s going into the oven and will finish cooking there. Then, remove the chicken and cut into strips. Dice the artichokes. Yes, artichokes!
Form the pizza dough into a ball, place in a bowl, and drizzle with 1 tsp of olive oil. Using your fingers, stretch the dough out on a pizza sheet. Once in the desired shape, spread with a layer of the sauce from the Chicken Piccata Meal Starter.
Add the chicken strips and artichokes.
Top with cheese. Yummy, delicious cheese. Then, sprinkle with dried basil. You could, of course, also use fresh.
Place in an oven preheated according to the pizza dough package directions. Mine was 425 for 15 minutes. What emerges is a glorious, so very easy weeknight meal that everyone will absolutely love.
It’s really nice when dinner can be the most relaxing part of the day.

Easy Chicken Piccata Pizza
Ingredients
- Michael Angelo's® High Protein Meal Starter Chicken Piccata 20 oz. Box
- 13 oz pizza dough
- 1/2 cup mozzarella cheese, shredded
- 1 tsp olive oil
- 1/4 tsp dried basil
Instructions
- Preheat oven to directions on pizza dough package. Mine said 425.
- Heat Chicken Piccata Meal Starter in microwave for 8 minutes.
- Gently form the pizza dough into a ball and place in a bowl. Drizzle 1 tsp olive oil. Cover pizza dough with oil.
- Stretch pizza dough on a pizza sheet.
- Cut chicken from Chicken Piccata Meal Starter in strips. Dice artichokes.
- Spread a layer of sauce from Chicken Piccata Meal Starter on pizza dough.
- Add chicken strips and diced artichokes.
- Cover with cheese. Sprinkle dried basil.
- Place into oven for 15 minutes, or according to pizza dough package directions.
- Let sit for a few minutes before cutting.
