My favorite part of the state fair has always been Lemon Shake Ups. I made my own version before, shaking it inside mason jars, and now I’m adding it to freeze pops for our Fruity Lemon Shake Up Freeze Pops!
Freeze pops, otherwise known as popsicles, are so easy to make and a great way to cool off in the hot days of summer. They can also be made a million different ways. You can freeze, quite literally, almost anything. The hardest part is waiting until they’re completely frozen. I’m an impatient sort.
For this, I added the sweet taste of Lemon Shake Ups with diced bites of strawberry, pineapple, and mango for our Fruity Lemon Shake Up Freeze Pops.
Fill your molds then stick them in the freezer and wait. Then wait some more. And when you think they should be frozen, wait just a little bit more to make sure. Actually, it’s probably the best idea to make these late in the day and let them freeze overnight, that way you can just sleep through all the waiting.
- 1/2 large lemon - juiced
- 2 tbsp sugar
- 8 oz water
- Dice your strawberries, mango, and pineapple. Add layers of each until you reach 2/3 up your mold.
- Add the juice from 1/2 a lemon, sugar, and water in a mason jar with a lid. Make sure there are no seeds from the lemon. Shake it until mixed well. Pour into each mold until full.
- Apply tops to molds and freeze until fully frozen. At least 6 hours.
