Honeycomb Turns 50! Morning Cereal Muffins Recipe

I love cereal. Kids love cereal. In fact, it’s more than just a breakfast staple around here. I’m actually more likely to eat a bowl of cereal as a late night snack than as an early morning meal. Most mornings you can find at least one of my kids eating a bowl of cereal for breakfast, though.
One of my longtime favorites has been Honeycomb.
With a sweet honey taste, 10 essential vitamins and minerals as well as 8g of whole grain per serving, Honeycomb makes a great way to start your morning. To celebrate Honeycomb turning 50 this year, we were sent a box of the cereal to enjoy and it’s just as good now as was back then. Safe to say, Honeycomb is aging well.

Honeycomb is such a classic cereal and these are tasty muffins, perfect for a quick grab and go in the morning rush!

Morning Cereal Muffins Recipe
Morning Cereal Muffins made with Post Honeycomb cereal. Original recipe found on Post Foods.
Ingredients
- 1 cup flour
- 2 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/8 tsp. salt
- 1/3 cup cold butter or margarine
- 3 cups Post Honeycomb Cereal
- 1 cup milk
- 1 egg
- 1 tsp. sugar
- 1/8 tsp. ground cinnamon
Instructions
- Preheat oven to 400°F. Mix flour, 2 Tbsp. sugar, the baking powder and salt in large bowl; cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Mix cereal and the milk in medium bowl; let stand 3 min. Stir in egg. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
- Spoon evenly into 12 greased medium muffin cups, filling each cup 2/3 full. Mix 1 tsp. sugar and the cinnamon. Sprinkle evenly over muffins. Bake 20 min. or until golden brown. Cool.

Honeycomb cereal is so good, I haven’t thought about it for a long time! While your recipe looks absolutely delicious, I’d definitely try to leave the cereal out so I can have more in my bowl 🙂
