Patriotic Cookie Sandwiches
What’s red, white, and blue and so yummy the kids might just forget about fireworks on the 4th of July? That might be stretching it, I mean we all love fireworks. But these Patriotic Cookie Sandwiches are just that good!
They’re made with a box cake mix, too, so they go together in no time. And they’re the perfect recipe to get kids in the kitchen helping.
For our Patriotic Cookie Sandwiches, you will need a box white cake mix. In a large bowl, mix together the cake mix, 1/2 cup butter, and 2 eggs. Divide the batter between 2 bowls.
Add a few drops of red food coloring to one bowl, mixing well. Continue adding food coloring until you get your desired shade of red. Repeat this process for the blue in the other bowl.
Drop cookie dough by rounded spoonfuls onto the parchment paper. Bake the cookies for 10-11 minutes.
As the cookies are baking, mix 1/2 cup butter, cream cheese, and vanilla in a large bowl until fluffy. Mix in powdered sugar.
Once cookies are baked and cooled, flip the cookies over so the flat side is up. Pipe icing onto one blue cookie and top with a red cookie.
Finally, hold cookies sideways and cover with fun patriotic sprinkles. Enjoy and Happy 4th of July!

Patriotic Cookie Sandwiches

- 3 1/2 cups powdered sugar
- 2 tsp vanilla
- 8 oz. cream cheese
- Red & blue gel food coloring
- Patriotic sprinkles
Instructions
- Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
- In a large bowl, mix together cake mix, 1/2 cup butter, and 2 eggs.
- Divide dough evenly between two bowls.
- Add a few drops of red food coloring to one bowl, mixing well. Continue adding food coloring until you get your desired shade of red. Repeat this process for the blue in the other bowl.
- Drop cookie dough by rounded spoonfuls onto the parchment paper.
- Bake 10-11 minutes.
- Meanwhile, in a large bowl, mix 1/2 cup butter, cream cheese, and vanilla until fluffy. Mix in powdered sugar.
- Once cookies are cooked and cooled, pipe icing onto one cookie and top with another cookie. Be sure to flip the cookies over so you have a flat surface on both sides of the icing.
- Hold cookies sideways and rotate to sprinkle with fun patriotic sprinkles.
