I’m not ashamed to admit that sometimes, I even let the store completely cook for me by taking advantage of their deli or frozen food section. It’s just one of the things you have to do when you have kids and busy nights. Everyone gets full and no one knows you didn’t cook it from scratch.

For those nights, it’s great to have a store where you can get everything you need in one place. We love going to Schnucks for just that reason. They have such a great selection along with a wide variety of fresh produce and meat, that it’s easy to get ideas for quick and delicious meals to feed my hungry group.

Among the ingredients I picked up while on my most recent shopping trip were those for King Ranch Chicken Casserole that I planned to prepare in my slow cooker. I’ve been trying to remember to bring my slow cooker out more, because it really is like another set of helping hands saving time in the kitchen. Pour the ingredients in and forget it until you’re ready to eat.

You can find most of these ingredients at Schnucks in their own store brand, so it’s a real savings salute. Cook the chicken, combine the ingredients, layer, and set your slow cooker. Serve with more tortilla chips, because part of the fun is that you don’t really need a fork. Though you might still want to set those out, too, just in case.

I love King Ranch Chicken Casserole, because it’s cheesy and flavorful and easy and you can eat it with tortilla chips. My kids and I like to say that it’s like a meal and a dip in one.

My kids always have some fun stories to tell about school, whether about their classmates or what happened in the hall on the way to class or an excited retelling of the funny joke their teacher said that day.

Slow Cooker King Ranch Chicken Casserole

Yield: 8 servings
Prep Time: 20 minutes
Cook Time: 6 hours
Total Time: 6 hours 20 minutes

Ingredients

  • 2 cups cooked chicken - diced (about 5 chicken breasts)
  • 10 oz diced tomatoes
  • 10.5 oz cream of chicken soup
  • 10.5 oz cream of mushroom soup
  • 1 tbsp garlic
  • 1 small onion
  • 1/2 yellow bell pepper
  • 1 tbsp hot sauce
  • 1 cup chicken broth
  • 2 cups shredded cheese
  • 12.5 oz bag tortilla chips

Instructions

  1. Spray crockpot with cooking spray.
  2. Spread layer of tortilla chips on bottom of crockpot.
  3. Combine chicken, diced tomatoes, both soups, chicken broth, onion, bell pepper, garlic, and hot sauce in large bowl. Place half of mixture on top of chips. Top with half of cheese.
  4. Repeat layers - chips, mixture, and rest of cheese.
  5. Cook on low for 6 hours or high for 4.
  6. Serve with more tortilla chips.
