From the minute my kids raise their heads from their pillows first thing in the morning, my hope is that they don’t just have an okay kind of day. I hope it’s great. That, in other words, the force is with them. They can’t do this without a good breakfast, though. And that starts with a blast off from Kellogg’s® Eggo® Star Wars Galaxy Adventureâ„¢ Buttermilk Pancakes.

Available at Walmart in the frozen breakfast aisle, we picked up a 20 ct box of Kellogg’s® Eggo® Star Wars Galaxy Adventureâ„¢ Buttermilk Pancakes. Since the full line of Eggo waffles and pancakes now have no artificial flavors and colors from natural sources, I feel good knowing we’re starting the day off with a better big bang.
Especially when I can surprise the kids with a Starry Galaxy Breakfast.
To bring a bit of the galaxy to our breakfast table, we need a Simple Blueberry Syrup. The name says it all, it’s really simple.
Combine fresh blueberries, sugar, water, and cornstarch in a pan.
Bring to a simmer then let it all bubble and reduce into a thick, delicious syrup.
Not only delicious, but it’s the perfect consistency for our Starry Galaxy Breakfast. Set the scene with dark plates, we used a small dark cookie sheet, and star stickers. Then, use the syrup to make a scene of blueberry star bursts and space matter beams coming off the back of the Star Wars pancake ships.
Don’t forget the puffs of white whipped cream, too.

Simple Blueberry Syrup
Ingredients
- 2 cups fresh blueberries
- 1/2 cup sugar
- 1 cup + 2 tbsp water
- 1 tbsp cornstarch
Instructions
- In a medium saucepan, bring blueberries, sugar, and 1 cup water to a boil. Reduce heat and simmer until berries just begin to burst.
- Stir together 1 tbsp cornstarch and 2 tbsp water in a small bowl. Add to blueberries. Mix well.
- Continue to let simmer until the sauce thickens.
- Can be stored in a jar in the refrigerator for up to 2 weeks.
- Use on a dark plate with puffs of white whipped cream, fresh blueberries, and star stickers for a fun breakfast event.
