When it comes to babies, I have to say it’s been awhile. I like to think of myself as an experienced mom, but I’m sure a lot has changed since my youngest was a newborn. There are so many different products out now, it’s enough to make your head spin. However, I’m also sure that many things have stayed the same. Like what a baby really needs, which isn’t much. Since my newest little one will be arriving in the warm month of August, I’ll be sure to stock up on onesies, diapers, and of course, bottles.
Speaking of bottles, I grabbed my first 3 pack of Playtex Babyâ„¢ VentAire® while at Target. I remember using the VentAire brand in the past, but they’ve come a long way since then. Now, they are designed for complete tummy comfort. This, I remember, is also very important.

Because what we think we need may actually be what we want and nice to have. Those are nice to ask for at the baby shower, but make sure you stock up on what you really need first.
What a baby shower really needs, though, are delicious treats. Since one thing that has never changed with me from baby to baby is the song You Are My Sunshine, I’ve sung it to every one of my kids, I thought that would be a cute theme for a baby shower. And a yummy excuse for Lemon Cupcakes!
Because Lemon Cupcakes remind me of sunshine.
For these You Are My Sunshine Lemon Cupcakes, you first need to mix butter and sugar. Then add 2 eggs, and vanilla extract. Once that’s combined, stir together flour, baking powder, and salt in a separate bowl.
Mix it all together with milk and lemon juice for that sunshine kick.
Spoon into a muffin tin lined with yellow cupcake liners and bake for about 18 minutes at 350.
Once that’s baking in the oven, start on the Vanilla Frosting. That’s a simple combination of butter, powdered sugar, heavy cream, vanilla, and salt. Garnish with lemon zest.

Delicious spring cupcakes with a sentimental flare. Perfect for baby showers, or to enjoy in the spring sunshine before the new baby arrives. Because a lot may have changed, but I’m pretty sure sleepless nights with a newborn and long days are still the same. It’s been awhile, and I can’t wait. You Are My Sunshine Lemon Cupcakes
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- juice from 1 lemon
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup heavy cream
- 2 tsp vanilla
- 1/4 tsp salt
Instructions
- Preheat oven to 350. Line muffin tin with 12 cupcake liners.
- Mix 1/2 cup butter and sugar together until smooth. Add eggs and vanilla. Continue beating until well combined.
- In another bowl, stir together flour, baking powder and 1/2 tsp salt. Add into wet ingredients slowly until all combined.
- Beat in milk and lemon juice. Zest lemon before juicing.
- Spoon batter into cupcake liners. Bake for about 18 minutes, or until toothpick comes out clean. Cool completely.
- While baking, beat butter until creamy. Add powdered sugar, heavy cream, 2 tsp vanilla, and salt and mix until smooth.
- Frost cupcakes and top with lemon zest before serving.
