Tomato and Guacamole Grilled Cheese
This Tomato and Guacamole Grilled Cheese and I go back a long way. It’s my go-to lunch of choice on warmer days, nice and light yet the combination of tomatoes and grilled cheese with the guacamole, it’s tasty and filling. I thought I was brilliant when I originally came up with it.
I’ll still be the first to give myself a pat on the back for this one.
It’s also quick enough that a busy, frazzled mom can have a decent lunch that doesn’t involve scavenging through the fridge for leftover chicken nuggets from the night before.
Since the tomatoes are the meat of this sandwich, you want to make sure you get the best you can whether it’s straight from your garden or the store. I tend to prefer 2 medium-thick slices. Don’t go overboard with any of these ingredients or your bread will become too soggy.
Slather some guacamole on one side of your bread. Again, you can prepare your own, but I pick mine up at the store. Place your cheese on the other slice of bread. The guacamole and cheese act as your glue. Tasty glue.
Grill and eat. With chips. I like salt & vinegar, personally.

Tomato and Guacamole Grilled Cheese
A quick, easy, and light grilled cheese great for lunch!
Ingredients
- tomato
- guacamole
- 2 slices sandwich bread
- 1 slice pepperjack cheese
- 1 tbsp butter
Instructions
- Cut your tomato slices, thin to medium-thick. Don't go overboard on the tomato or it will make your bread too soggy.
- Spread one side of your bread with the guacamole. Again, don't go overboard. Place the slice of pepperjack on other piece of bread. Add tomato.
- Heat 1 tbsp of butter in a small pan. Grill guacamole side first until bread is toasted brown. Flip and heat until cheese is melted.
- Cut in half, eat, enjoy!
OMG! We frequently make grilled cheese with tomatoes, but why on earth did we never think about guacamole?

If there was ever a way to make a grilled cheese better, adding guacamole would be it. This sounds delicious!

I’ve added sliced avocado to my grilled cheese before. I do it after cooking so the avocado is cool… just the way I like it 🙂
