When it comes to Valentine’s Day, I used to be one of those who would turn up their noses. It’s a made up holiday, I’d dismiss. You should tell those you love how you feel every day, not just this one. And while I still hold those statements true to a degree, I also find myself enjoying the holiday more and more. A large part of that is because of my kids, they make it fun, but it’s just nice to have a day specifically about showing our love for one another. And a chance to eat yummy treats like these X’s & O’s Red Velvet Love Brownies doesn’t hurt, either.

While my kids do make the day fun, it’s not just about them. Family, friends, and all who are important in our lives should be appreciated, as well.

My mom, specifically, has had a rough time of it. She’s such a great mom to me, friend to me, and grandmother, but last year was not the best year. As such, I wanted to do something special just for her for Valentine’s Day. I’ve been putting together ideas for sweets, candy and brownies and cookies, too.

How can you not like a day with so much chocolate?

But when I saw that Walmart had a new kind of M&M’s® for the occasion, M&M’s® Red Velvet, I knew I had to grab a bag. Along with it, I gathered a few extra ingredients that I would need to make a batch of X’s & O’s Red Velvet Love Brownies. I should have grabbed a couple bags of the M&M’s®, to be honest, as I almost didn’t have enough after trying a few (a lot) as I put together the recipe. I did grab another bag of Peanut Butter M&M’s®, though.

It’s important that you go in order when mixing all ingredients. Once combined, I added in a handful of white chocolate chips as well as a handful of the M&M’s®.

Pour in a buttered baking dish and bake for about 30 minutes. Then make your cream cheese frosting. Add your X’s and O’s to the tops and you have a lovely, special Valentine’s Day treat!

Before I gifted my mom with hers, though, my kids had to taste test. It’s a job, but someone has to do it. With their very enthusiastic seal of approval, we’re going to make my mom a homemade card to present to her along with the brownies. That should brighten her day!

X's & O's Red Velvet Love Brownies

X's & O's Red Velvet Love Brownies

Inspired by the new M&M's Red Velvet flavor, Spread the love with X's & O's Red Velvet Love Brownies.

Ingredients

  • 1 stick unsalted butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • Pinch salt
  • 1 tablespoon red food coloring
  • 1 teaspoon vinegar
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/4 cup white chocolate chips
  • 1/4 cup M&M's Red Velvet, plus extra for X's and O's
  • 4 ounces unsalted butter, softened (for frosting)
  • 4 ounces cream cheese, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350 degrees F. Butter an 8 by 8-inch baking pan and set aside.
  2. Melt 1 stick of butter in a large bowl. Once melted, add the sugar, vanilla, cocoa powder, salt, food coloring, and vinegar, in that order, mixing between additions. Whisk the eggs in a separate bowl and stir it into the mix. Fold in the flour until lightly combined. Add white chocolate chips and M&M's.
  3. Bake the brownies for 30 minutes. Remove to a cooling rack and allow them to cool completely before cutting.
  4. In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract.
  5. Frost brownies. Using 5 M&M's for each brownie, press M&M's into X's and O decorations on top.

  8. The only problem I see is that the recipe says it serves 9. I’m fairly confident I would gobble it all up by myself in one sitting!
